Abstract

The main target of this research was to conduct the effect of dietary supplementation with Quinoa seeds powder (QSP) under two various concentrations (150g/kg and 300 g/kg) to give more protection against hypercholesterolemia disease. twenty (20) mature male albino rats weighting between 184 ± 2 B.Wt., were used in this study. The rats were divided into 4 groups (5 rats in each group) one of them used as control-ve while other groups had given 1.5% cholesterol plus 10% sheep tail for 15 days as a positive group, one of these left as control +ve and other groups fed on two doses of quinoa (150 g/kg diet, 300 g/kg diet) for 28 days.  Determined The B.W.G and weight of internal organs, lipid profile (total cholesterol, triglyceride atherogenic index, HDL, LDL and VLDL) in addition, the oxidants (MDA) and antioxidants enzymes activities including SOD, GSH&CAT of hypercholesterolemic rats were analyzed. Results: indicated that there were significant decreases in antioxidant activities (GSH, CAT, SOD) in control +ve when compared to control -ve group,Results revealed that all treatments quinoa  seeds powder improved the previous parameters, the best treatment observed in the group administrated with quinoa fed at dose of  300 g/kg diet. Therefore, the study recommends that quinoa supplementation exerts significant, positive effects on metabolic, hypercholesterolemia, cardiovascular.
